Join Chef Jeffrey Larsen and the Inn on Randolph for a weekend of cooking, and learn to prepare a variety of gluten free holiday dishes sure to please your family and friends. This is a comprehensive class with most sections featuring hands on cooking at the inn’s gluten free kitchen. You will come away with over fifteen recipes and the knowledge and skills to prepare a wonderful holiday meal from the appetizers to the dessert!
Friday November 1st
5:00 - 5:30 Arrival - Meet and greet while enjoying delicious gluten free appetizers.
5:30 - 6:30 Class will gather with Chef Jeff for a lecture on gluten free flours and how they are combined for successful baking.
7:00 - 8:00 Tour the famous Oxbow Public Market in downtown Napa and have dinner at one of two of Napa’s very own, gluten free restaurants! - http://oxbowpublicmarket.com After dinner holiday cookies, coffee and tea will be served in the kitchen at the Inn on Randolph.
Saturday November 2nd
9:00 AM Gluten free breakfast at the inn
10:30 - 12:00 Class will meet for a demonstration by Chef Jeff about gluten free breads, baguettes and dinner rolls. We will also begin the process of making stuffing.
12:00 - 1:30 Class break, and lunch of your own choosing.
1:30 - 3:00 Hands on pie making - Each student will make a pumpkin pie.
3:00 - 4:00 Break
4:00 - 5:00 Appetizers – The class will learn how to make Chef Jeff’s crackers and bruschetta. He will also teach several easy dips and spreads.
7:00 The class will gather in the Neiman Room at the inn for a holiday dinner. Holiday Dinner Menu Roast Turkey with stuffing, mashed potatoes and gravy; including a side of green beans and whole grain dinner rolls. Pumpkin pie for dessert.
Sunday November 3rd
9:00 AM Breakfast and Check out
10:00 - 11:00 Questions and answer session in the Neiman Room - wrap up of the weekend.
11:00 - 12:30 The class will learn how to bake cookies - one base dough and six different cookies including cut out cookies, sugar cookies and gingerbread men.

Please book early, as classes are limited to 12 people. This class is a gluten free class. Chef Jeff always takes into account other known food allergens in the writing of his recipes - eggs, corn, soy, tree nuts and dairy. However, for the classes at the Inn on Randolph, we will use eggs, trace amounts of soy in the non-stick spray and the chocolate chips in one of the cookie recipes. We also use nut flours but Chef Jeff will substitute them out if the majority of the class necessitates it.
